- Brisket Roll
Smoked beef brisket slices with creamy slaw and BBQ sauce in a soft damper roll. Our traditional Texas style brisket is seasoned with salt and pepper and smoked for 10-12 hours over ironbark log fire until the meat is tender and delicious.
- Pulled Pork Roll
Smoked pulled pork with creamy slaw and BBQ sauce in a soft damper roll. Our Carolina style pork shoulders are seasoned with traditional red sweet/heat seasoning and smoked for 10 hours over ironbark log fire until the meat is fall apart tender.

- Chicken Maryland Plate
A double serve of smoked chicken maryland (thigh & drumstick) rubbed in traditional Carolina seasoning, smoked over ironbark log fire. A damper roll and a full side are also included.
- Beef Short Ribs
Rib Bone section- $10.20/100gm (approx $30) Our traditional Texas style short ribs are seasoned with salt and pepper and smoked over ironbark log fire until the meat is tender and delicious.
- Pork Belly Box
Pure Decadence. 400 grams of sliced pork belly rubbed and pulled pork seasoned in traditional Carolina rub and smoked over ironbark log fire until tender. A damper roll and a full side are also included.
- Pork Ribs
Half racks - $9/100gm (approx $40) Full rack - $9/100gm (approx $80) Our Carolina pork ribs are the meatiest pork ribs we could source in Australia. Rubbed in traditional red sweet/heat seasoning and smoked for hours over ironbark log fire until tender.
- Loaded Nachos
Toasted tortilla chips with melted cheese, covered with smoked pulled pork & brisket beans then drizzled with sour cream, jalapeno peppers, salsa and coriander. Add Guacamole for $2.
